Baked Glazed Carrots

Ingredients

  • 1 lb / 500 g carrots (baby carrots also work)
  • 1/4 cup / 60 g butter
  • 1/3 cup / 120 g maple syrup (can be replaced with honey)
  • dried thyme
  • fresh parsley
  • salt
  • black pepper

Instructions

  1. Scrub the carrots (or peel them), cut their ends off, and then wash them. We offer some fun ways to use the peels right here!
  2. You can use the carrots whole (especially if they are baby carrots), or you can cut them up to reduce the cooking time. 
  3. Place your carrots in a pot and cover them with salted water. Bring the pot to a boil, then reduce heat to medium and simmer for 10 minutes.
  4. While your carrots are getting ready, let's make the glaze! Add the butter to a small saucepan and melt it over low heat. Then add the maple syrup (or honey) and continue cooking on low heat, while occasionally stirring. Remove the pot from heat after about 2-3 minutes (the syrup only need to get warm; if you start noticing the mixture simmering [small bubbles are forming] then remove it from the stove). Add in salt (about 1 tsp) and pepper to taste, and a generous pinch of dried thyme.
  5. When the timer is done for the carrots, drain them, then pour the maple mixture over them. Toss well to make sure all carrots are evenly coated, then transfer everything to a cookie sheet (make sure to use baking sheet paper so that nothing sticks). Bake in a preheated oven at 425F/220C for 10-15 minutes, until carrots are roasted.
  6. Sprinkle with chopped parsley and enjoy!
