Stuffed Avocado Boats

Ingredients

  • 2 ripe avocados, halved and pitted
  • 1 cup cooked quinoa
  • 1/2 cup cooked and shredded chicken (or black beans for a vegetarian option)
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup feta cheese, crumbled (not necessary for vegan alternative)
  • Fresh parsley or cilantro for garnish
  • Salt and pepper to taste

Instructions

  1. Scoop a bit of avocado from each half to create a larger hollow for the stuffing.
  2. In a bowl, combine cooked quinoa, chicken (or black beans), cherry tomatoes, and feta cheese. Season with salt and pepper. Remember, you can always modify this recipe to make it vegan or vegetarian. You can even add more veggies, such as corn or bell peppers!
  3. Stuff the avocado halves with the quinoa mixture.
  4. Garnish with fresh parsley or cilantro and serve. Enjoy your avocado boats!
