Avocado and Black Bean Salad

Ingredients

  • 1 can black beans, drained and rinsed
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  2. In a small bowl, whisk together lime juice, olive oil, salt, and pepper to create the dressing.
