Omelet Pizza
Omelet Pizza
Serves 1 potion.
Ingredients
- 2 eggs
- 1 Tbsp / 15 ml olive oil
- 2 Tbsp / 30 g tomato sauce
- 1/4 cup / 60 g shredded mozzarella
- 1/3 cup / 40 g halved cherry tomatoes
- 2 Tbsp / 10 g grated Parmesan cheese
- Italian seasoning
- salt
- pepper
Instructions
- Start by whisking the eggs with a pinch of salt.
- In a nonstick frying pan, heat some olive oil over medium-low heat. Add the eggs, cover with a lid, and reduce heat to low. Let cook until the surface of the omelet is almost set.
- Carefully slide a spatula under the omelet and quickly flip it over in a swift motion.
- Spread the tomato sauce all over the omelet, then cover it with mozzarella. Add the cherry tomatoes. (At this point you can either fold the omelet in half or leave it as is.)
- After about 3-4 minutes remove the omelet from the stove and sprinkle with grated Parmesan cheese. Enjoy!
*Just like with pizza, this recipe is very versatile. Feel free to add your twist to it, by adding pepperoni, olives, or mushrooms. If you'd like more ideas for Pizza Toppings click here!
