Avocado & Poached Egg Toast

Serves 2 portions, each of 2 slices of toast.

 

Ingredients

  • 4 eggs
  • 4 slices of whole-grain bread
  • 1 avocado
  • 4 Tbs / 85 gr grated Parmesan cheese
  • 150 gr / roughly 1 cup cherry tomatoes
  • oregano
  • salt
  • pepper

Instructions

  1. Poach the eggs to desired consistency. You can find instructions here.
  2. Toast the bread however you like. We offer a few ways here.
  3. Peel the avocado and remove its pit (instructions here). In a bowl, mash the avocado to make a paste, and then spread it on the pieces of toast. If your avocado is not that ripe yet, you can also cut it into small cubes or thin slices and place them on the pieces of toast.
  4. After gently removing any excess water from the eggs with a clean towel, place each egg on a piece of toast. Make small cuts in the middle of the eggs so that a little bit of yolk spreads on top of the sandwich. Sprinkle the Parmesan cheese on top while the eggs are still steaming.
  5. Season everything with salt and pepper to taste.
  6. Serve with halved cherry tomatoes, sprinkled with salt and fresh or dried oregano. Enjoy!
